In a commercial kitchen, the sink is the part everyone assumes is clean. Hands are washed there, pots are rinsed there, produce is rinsed there. It is also the surface that sees the most abuse: food scraps, oil from washing up, splash from the fryer, and the constant damp that lets residue build up around the drainboard, the tap handles and the outside of the basin. A quick wipe with a cloth and a spray bottle usually moves the grease around instead of removing it.
When a commercial kitchen steam cleaning machine is used instead of a cloth, the result depends on a small number of controllable factors. If you are a kitchen operator, a facilities manager, or a buyer comparing equipment for a canteen, restaurant or central kitchen, this article explains what actually changes the outcome on sink exteriors — and which settings and techniques to specify.
What the residue on a sink exterior actually is
Sink exteriors, especially stainless steel ones, collect a mixed film: cooking oil carried by splash and by hands, fat from drained pots, starch and protein from rinsed food, plus limescale where tap water dries on the metal. That combination behaves differently from plain dirt.
- Oil and fat stay soft near the surface but harden into a tacky film in corners, seams, the tap base and the overflow. Cloths smear this film rather than lifting it.
- Limescale binds the oily film to the steel, so the surface looks dull and streaky even after wiping.
- Damp areas between cleaning cycles keep the film biologically active, which is what causes the odour around a drainboard.
- Brushed stainless has a grain. Grease and scale sit in the grain lines, so the surface reads clean from a distance and looks dirty under light.
Because the deposit is both fatty and mineral, a water-based wipe on its own is rarely enough. Heat is what breaks the bond.
Factor 1: temperature of the cleaning medium
Heat is the single biggest variable. Hot water and steam soften hardened fat and lower its viscosity, so it can be lifted off the surface instead of spread across it. A machine that delivers genuinely high steam temperature handles the seam deposits that a mop, cloth or hose cannot.
On the fixed unit in our range for this kind of duty — the Fixed Steam Cleaning Machine PowerDe HW02 — the product page lists a 6 kW heating power and an 80 L SUS304 tank. Ask us for the current steam temperature and vapour pressure figures for the configuration you are quoted, as published values should be confirmed against the specification we send you.
Factor 2: dry steam or wet steam, chosen for the right stage of the job
Most operators pick one mode and use it for everything. That is the second most common cause of disappointing results.
- Dry steam carries less free water and holds its heat longer on the surface. It is the right choice for breaking down the hardened grease film on the tap base, the drainboard seams and the panel under the rim, where you want dwell time rather than rinsing.
- Wet steam delivers more moisture with the heat, which suits the final pass on the basin sides and the surrounding wall tiles, where lifted residue needs to be flushed away.
The HW02 is specified as a dry and wet steam cleaner so both stages are done on one machine rather than by changing equipment mid-shift. Switching between modes deliberately, instead of defaulting to one, is what makes the difference visible on brushed stainless.
Factor 3: pressure, nozzle distance and dwell time
Pressure only helps if the nozzle is held at the right distance and moved at the right speed. Held too far away, the steam loses energy before it reaches the metal and the film is barely warmed. Held too close on a vertical surface, the jet pushes loosened grease into the seam it came from.
For a practical specification, treat dwell time as a controllable parameter in your cleaning procedure: pass slowly over seams, the tap base and the overflow, and work top down so that loosened grease runs off the surface into the drain rather than onto the cabinet front. Write the working distance and pass speed into the SOP and train to it; this is the step most operators skip and then blame the machine for.
Factor 4: water quality and the inlet arrangement
The steam is made from the feed water, so scale in the machine becomes scale on your sinks. The HW02 page lists a tap-water inlet with a 4-point internal-tooth joint (1/2 inch). If the supply in your area is hard, the water feed is worth checking at quotation stage rather than after installation, because scale build-up inside the machine lowers the temperature that actually reaches the surface and increases the maintenance burden.
Factor 5: drainage, workflow and what happens after the pass
Steam frees the grease; it does not decide where it goes. Around a sink, that means the floor, the gully and the cabinet front. Two points matter when you plan the job:
- The HW02 is a fixed unit with overall dimensions of 1,200 × 800 × 1,200 mm including handles, and it runs on a 220 V supply. Position it so the hose reaches every sink in the wash-up area without trailing across a walkway.
- Finish with a dry pass or a wipe so the steel is not left standing wet. A damp surface re-collects grease faster than a dry one.
Where a fixed machine fits, and where a mobile one fits better
Fixed units suit a central wash-up area, a factory canteen or a central kitchen, where sinks, hoods and cooking equipment are cleaned on a routine and the machine can stay in place. If your sinks are spread across several servery areas, or the cleaning has to move with the shift, our mobile range may suit better: the PowerDe cleaning equipment series covers driving-style and hand-pushed machines for a range of site layouts. All of these are listed on the Cleaning Equipment Series page.
Before you specify: the safety and protection features to ask for
A steam machine in a working kitchen is used by staff, not by a specialist contractor, so the protection features belong in your specification. The HW02 product page lists leakage, short-circuit, high-temperature, high-voltage and water-shortage protection, along with high-voltage explosion protection — list the items you need rather than assuming a count, since the wording on the page and in earlier records is not identical.
One honest note on scope: the HW02 product page documents vehicle exterior cleaning at fuelling and parking sites, interior vacuuming and disinfection, and engine-compartment cleaning. The kitchen scenarios in this article reflect the marketing direction we are working to, so before you place an order for kitchen duty, contact us and we will confirm the configuration and any site assumptions for your sinks, hoods and floors rather than let you take a scenario claim on trust.
Getting a configuration confirmed
If you are comparing options, send us the layout of the wash-up area, the number and type of sinks, the water hardness if you know it, and the cleaning frequency you are working to. Shenzhen PowerDe Automation Precision Equipment Co., Ltd. manufactures intelligent cleaning equipment in Shenzhen and supports customised configurations, so the same specification you would check on any supplier — tank size, mode selection, inlet arrangement, protection features — can be confirmed with us directly at sales@powerde.net.
