What is on the stovetop, and how thick is it?
Steam works on grease, sugar and carbonised food film. It is far less useful on loose debris, water-soluble spills that a mop already handles, or on surfaces wiped clean every shift where nothing has had time to bake on. Walk the line after closing and look at the horizontal surfaces around the burner heads and the vertical faces of the range body. If the deposit is soft, a conventional detergent wash is adequate and steam is overkill. If it is hard, dark and has survived repeated scrubbing, heat plus moisture is the practical way to lift it without abrading stainless steel.
Ask your cleaning team to describe the last three deep cleans: how long each one took, whether they needed scraping tools, and whether any panels were removed to reach the grime. If the answers show a repeated manual struggle, you have a documented baseline to compare against any equipment trial.
Can the machine be installed where your stovetops are?
Fixed units are built to sit in one place and run from the room supply. The fixed model on our cleaning range, the PowerDe HW02, is listed at 1,200 × 800 × 1,200 mm including handles, so it needs a real footprint, not a corner behind a trolley. Measure the aisle between the range and the wall before shortlisting anything. A machine that cannot reach the far end of the line will be used on the near burners only, and the cleaning result will never match the specification.
Then check the services. Our fixed unit is listed at 220 V working voltage with a tap-water inlet using a 4-point internal-tooth joint (1/2 inch). Confirm that the same supply and connection type exist beside your stovetops, or price the plumbing and electrical work into the quotation. If no utility drop is available in the kitchen, a mobile unit from the same cleaning equipment series is the more realistic option, and the comparison should start there rather than with a fixed model.
How much steam does your cleaning pattern need?
Tank capacity and heating power set how long you can work before the machine recovers. The HW02 is listed with an 80 L SUS304 tank and 6 kW heating power, with steam temperature and vapor pressure published as 160° and 0.8 MPa on the product page. Those figures are a starting point for a single line cleaned once per day; they are not a universal answer, and where a product title and its parameter block disagree on a name or value, we ask buyers to confirm the specification in writing rather than rely on the page.
Match the capacity to your interval. A kitchen that degreases one range each night needs less than one that runs multiple lines and a hood every night. Ask the supplier how long continuous cleaning is possible on one fill, and what happens when the tank runs down mid-shift. A commercial steam cleaning equipment supplier who cannot answer that question in your terms is not ready to quote your site.
Who operates it, and during which hours?
Steam at high temperature and pressure is a hazard in a room where staff are moving with hot pans. Decide before purchase who is trained to use the machine, and whether cleaning happens after service with the kitchen empty, or during prep with people around. That single decision changes the equipment class. Post-service work suits a fixed unit with a water gun and nozzle. Work alongside live cooking suits a smaller, portable machine that one person can move and shut down quickly.
Our product pages list leakage, short-circuit, high-temperature, high-voltage and water-shortage protection on the relevant machines, with some variants also listing high-voltage-explosion protection. Treat that list as a checklist for your own risk assessment: ask which protections are present, how they are tested, and what the operator does when one trips. Write the answer into the standard operating procedure, not into a training conversation nobody records.
What will you do with the run-off and the residue?
Steam loosens grease; it does not make the grease disappear. Someone still wipes it into a tray, a floor drain or a waste bin. Check that your floor falls and drainage can take the volume, and that local rules on grease discharge do not require you to intercept it first. A steam machine used on a floor without adequate fall leaves standing water that creates a slip risk the original cleaning routine did not have.
How will you prove the change worked?
Before any equipment arrives, photograph three stovetops under the same lighting, log the labour hours spent on each deep clean, and note the detergents and their monthly cost. Repeat the same records for two weeks after commissioning. Labour hours, chemical purchase and the visual condition of the surfaces are the three measures a kitchen manager can defend in a budget meeting. Anything claimed beyond those numbers should be treated as a supplier's estimate until your own records support it.
What to send us when you are ready
To quote a stovetop cleaning setup properly, we need the number and type of ranges, the aisle width and available floor space, the electrical supply beside the line, the water connection, the cleaning interval, and who will operate the machine. Send those details through our solutions page and we will match them to a model on the cleaning range, or tell you plainly when steam is the wrong answer for your kitchen.
